Ingredients (serves 4): 1 sachet Cantonese Fried Rice Spice Paste, 2-3 tbsp vegetable oil, 1 large onion, finely sliced, 100g shrimp, ham or bacon, 650g cooked rice, 2 beaten eggs, 100g frozen mixed vegetables, sliced spring onion and finely sliced red chili for garnish.
Instructions:
1. Heat the oil in a nonstick wok over medium heat. Add the onion, shrimp, ham, or bacon. Stir-fry for 2 minutes.
2. Push the mixture to one side of the wok. Add the eggs, cook for 1 minute, and stir them into the rice.
3. Add the mixed vegetables and stir-fry for 2 minutes or until heated through.
