1. Cook sushi rice (preferably Japanese sticky rice) according to the package directions.
2. Once cooked, transfer the rice to a large container (preferably wooden or plastic).
3. Pour the prepared vinegar over the hot rice (approximately 30-50ml of vinegar per 300g of cooked rice).
4. Gently mix with a spatula, using chopping motions to avoid crushing the rice, while fanning to cool and shine the grain.
5. Let the rice rest at room temperature before using it in sushi, maki, nigiri, or bowls.
