1. Boil plenty of water in a large pot, without adding salt.
2. Add the soba noodles and cook for 4 to 6 minutes, stirring occasionally to prevent sticking (check the package for the exact time).
3. Once cooked, drain immediately and rinse under cold running water to stop the cooking process and remove the starch.
4. You can serve them cold (as zaru soba) with dipping sauce, or hot in soup.

Advice:
For a better texture, gently rub them with your hands while rinsing. This helps leave them firmer and cleaner.
