 1. Wash the rice carefully and boil it with approximately 1.25 times the amount of water and the desired amount of salt.
 2. Simmer covered for about 20 minutes. Stir as needed.
 3. Next, remove the pot from the heat and let the rice rest for about 10 minutes.
 4. The amount of water can be adjusted according to the desired consistency.
 For sushi rice:
 5. Prepare a mixture of rice vinegar, sugar, and salt (5 tablespoons of vinegar, 1 tablespoon of sugar, and 1 teaspoon of salt per cup of rice). Heat until dissolved, but do not let it boil.
 6. Pour the vinegar mixture over the still-hot rice. Mix gently with a wooden spoon.
 7. Let it cool to room temperature, and it's ready to use!
