1. Rinse the rice several times under cold running water and drain it.
2. Place the rice in a pot and add the same amount of water as rice.
3. Bring the rice and water to a boil with the pot covered; then simmer for 12 minutes with the pot covered, and then let it rest, also covered, for another 15 minutes.
4. To season the rice, place it in a wooden bowl. Mix 3 tablespoons of rice vinegar, 1 tablespoon of sugar, and 1 1/2 teaspoons of salt, then gently heat the mixture. Stir it gently into the rice to coat it evenly.
