1. Place the dry noodles in a pot of boiling water and cook for 3 minutes. Drain and rinse well with cold water in a colander.
2. Add 800 ml of water or beef or chicken stock to a saucepan along with the spice mix and the herb bag. Bring to a boil, then reduce heat to medium and simmer for about 5 minutes.
3. Finely chop the shallots and cilantro, and thinly slice 3 pieces of raw beef or cooked chicken.
4. Place the noodles in individual bowls and add bean sprouts, basil leaves, and blanched beef or cooked chicken slices. Bring the broth back to a boil and pour the hot broth into each bowl.
5. Garnish with chopped shallots and cilantro. Serve hot with chili fish sauce and black soy sauce to taste.
Rice noodles: 92% rice flour, water, tapioca starch, salt.
Sachet of spices and herbs: sugar, salt, pepper, cinnamon, star anise, cloves, cardamom.
