Recipe: (For 2–3 people).
1. Stir 2 cups (400 ml) of coconut milk with 4 tablespoons (60 g) of vegetable oil over medium heat for 2 minutes.
2. Add 2 3/4 tablespoons (50 g) of curry paste and continue stirring for 2 minutes. A thin layer of oil will form on the surface.
3. Add 3/4 cup (200 g) of your favorite meat and 1 1/2 cups (120 g) of well-cut eggplant.
4. Add 1/2 tablespoon (7 g) of fish sauce and 1 2/3 tablespoons (33 g) of palm sugar.
5. Pour in 1/2 cup (110 ml) of water (keep boiling for 10 minutes).
6. Add basil leaves, fresh chilies, and kaffir lime leaves.
